Valentines Paleo Sugar Cookies

TREAT YO SELF! And bonus!! These contain no white flour! Try em out and let us know how you like them and always remember to eat pure and simple 🙂

Almond Coconut Sugar Cookies (Print here )

Ingredients:

1 ¼ cups paleo baking flour (we use Bob’s Red Mill)

½ tsp. nutmeg

1 tsp. baking soda, mixed in 1 tsp. apple cider vinegar (this helps counteract the baking soda flavor)

½ cup shredded coconut

¼ cup raw honey

1 tsp. almond extract

½ cup coconut oil

Dash of salt

1-2 tbsp. coconut milk, if needed

For the frosting:

¼ cup coconut butter, melted

¼ cup honey

1 tsp. beet puree (for color)

Directions:

  1. In medium sized bowl, mix dry ingredients
  2. Add all other ingredients and mix well, if dough is too dry add milk. If too wet, add more flour
  3. Roll out on floured surface
  4. Use mini cookie cutters* (1/4 inch thickness), this will help the cookies stay together and cook evenly
  5. Bake in oven at 350 degrees for 5-6 minutes or when slightly browned. Let cool.FullSizeRender-3.jpg
  6. For the frosting, mix together all ingredients in bowl and frost cookies

*Not gonna lie, these cookies can be crumbly but we found that if you use mini cookie cutters they stay together
