Two Layer Jello

Why have one layer when you can have TWO?? You can benefit from all the gelatin and have a fun snack to add to meals! Any kid (or adult :)) would love these!! Don’t worry, the only sugar comes from FRUIT! So much better than those prepackaged, artificial dyed, sugary, jiggly substance that you can buy from a grocery store. Do yourself a favor and make your own, pure and simple 🙂

Two Layer Jello (print here )

Ingredients:

For the bottom layer-

1 bottle apricot nectar (25.4 fl oz.)*

2 tbsp. unflavored gelatin powder

1 tsp. lemon or orange zest

Directions:

  1. Pour 1 cup of the nectar into a bowl and sprinkle the gelatin powder over top. Allow to sit until all the gelatin is wet
  2. Meanwhile, in saucepan, heat remaining nectar until warm (do not boil)
  3. Add warm nectar to bowl and stir until all the gelatin has dissolved and then add zest
  4. Pour into 7 small mason jars equally, should be half full, and let set for 1-2 hours

Top layer-

1 bottle coconut juice (cold-pressed, 32 oz.)**

2 tbsp. unflavored gelatin powder

Directions:

  1. Pour 1 cup of the juice into a bowl and sprinkle with gelatin
  2. In a saucepan, warm the remaining juice
  3. Add the warm juice to the bowl and stir until all the gelatin has dissolved.
  4. Pour on top of the apricot layer in mason jars
  5. Replace the lid and refrigerate until set (1-2 hours)

*Make sure to get no sugar added! We use Bionaturae. Can use any juice you like (mango would be good!)

**We use Lakewood Organic 32 oz.
