“Breaded” Zucchini

There is no such thing as too many roasted vegetable recipes, right?! Roasting vegetables just makes them taste so good and changing up the seasoning a bit can make all the difference! In this recipe we used nutritional yeast as the base of the seasoning because I LOVE the taste of it!! It can be a cheese substitute in many recipes also. Hope you enjoy😁

“Breaded” Zucchini ( print here )


½ cup nutritional yeast

½ tsp. curry

1 tsp. salt

½ tsp. pepper

Parsley flakes

5 medium zucchini

2 tbsp. coconut oil


  1. Cut zucchini into slices and place in bowl
  2. Mix the first 5 ingredients together
  3. Pour coconut oil over zucchini and toss
  4. Sprinkle the seasoning over zucchini and toss, making sure that everything is coated
  5. Place on baking sheet in a single layer
  6. Bake at 350 degrees for 20-25 minutes


*You might have some seasoning leftover, depends on how much zucchini you use. We put the extra on the soup we had for dinner and it was delicious!!
