Mexican Shredded Chicken!

Looking for a really easy dinner? This is super easy and it’s in a crockpot!!! It makes a perfect weekend dinner if you put it on tacos, nachos (we did this with homemade potato slices! Sooooo good!!), or even put it on some mixed greens👍🏽 add guac to make it even better😉

Mexican Shredded Chicken ( print here )

Ingredients:
2 packages boneless, skinless chicken thighs (12)
1 package boneless, skinless chicken breasts (3)
1 tbsp cilantro, dried
2 tsp cumin
1 tsp chipotle chili
1 tsp tajin seasoning
1 tsp salt
2 tbsp coconut oil
2 cloves garlic, minced
1 7 oz can of green chilis
1-2 jalapeños
1/4 cup chicken stock
1/4 cup RedHot (or other hot sauce)

Directions:

  1. Place all the chicken in crockpot
  2. Mix together cilantro, cumin, tajin seasoning, chipotle chili and salt, set aside
  3. Melt coconut oil in a pan and add garlic. Sauté briefly (don’t brown)
  4. Add green chilis, jalapeños, chicken stock, hot sauce, and spice mixture
  5. Pour over chicken and cook on low for 4-6 hours or until chicken is tender
  6. Shred and serve.

Can be used on tacos, nachos (on homemade potato slices👍🏽) or salad!
