Chunky No-Grainola

I don’t know about you but I love my granola in chunks! It’s more like a cereal and it taste so good! And there are no grains!! It also travels very well and it is a perfect breakfast side meal, just do some greens and a protein for the main meal. Hope you enjoy 🙂

Chucky No-Grainola (print here )

Ingredients:

2 cups raw cashews

1 cup slivered almonds

1 cup almond flour

1 cup shredded coconut

1 cup hemp seeds

1 cup pepitas (pumpkin seeds)

2 tsp cinnamon

dash of salt

½ cup honey

½ cup coconut oil

½ cup sunflower butter

1 cup dried, unsweetened cranberries

 

Directions:

  1. Pre-heat oven to 350 degrees
  2. Mix together dry ingredients, except for cranberries in bowl
  3. In a pan, melt the coconut oil and stir in honey and sunflower butter just until mixed.
  4. Pour over nut mixture and mix until everything is combined
  5. Incorporate cranberries into mixture
  6. On a parchment lined pan, spread mixture out into one big piece
  7. Bake for 10-12 minutes
  8. Let cool, then break up into smaller chunks
