Spicy Sausage Frittata

Need to do some middle of the week meal prep? We got you covered with this dish! And who says frittatas are only breakfast? You can eat this anytime of the day. Its packed with protein, healthy fats and all da VEGGIES! Its the perfect meal and its pure and simple!

Ingredients:

6 eggs

½ tsp. salt

¼ tsp. pepper

2 tbsp olive oil or other cooking fat

8 oz ground pork

½ tsp. paprika

1 tsp. cumin

1 tsp. oregano

1 tsp. dried cilantro

1 tsp. tajin seasoning

¼ tsp. red pepper flakes

½ tsp salt

1 red pepper, chopped

1 8-oz package mushrooms, sliced

1 clove of garlic, minced

3 cups arugula or spinach

 

Directions:

  1. Preheat oven to 400 degrees
  2. Beat the eggs with ½ tsp salt and the pepper and set aside
  3. Mix sausage with paprika, cumin, oregano, cilantro, tajin, red pepper flakes and the other ½ tsp of salt, mix well
  4. On stove, heat oil in oven safe skillet over medium heat and add sausage mixture
  5. Cook until browned then add mushrooms, red pepper and garlic and cook until veggies are tender
  6. Stir in arugula until wilted, about 1 minute
  7. Pour egg mixture into pan
  8. As mixture sets, run spatula from edge to middle so the uncooked eggs seep underneath.
  9. Cook until almost set, then place into oven and cook for about 5 minutes or until not runny
  10. Cut into slices like a pizza and enjoy

*Top with salsa, hot sauce or avocado

Oh and try to find ground pork with no sugar added!
