Jicama Fries

What’s jicama? It’s a Mexican root vegetable that people describe as a savory apple. It is FILLED with all the good things like fiber, vitamin c, potassium, copper and iron! Jicama is great raw too! Jicama fries are a perfect alternative to regular white potato fries 🙂 Because trying new veggies is fun!! Hope you enjoy

Jicama Fries (print here)

Ingredients:

1 large jicama

1/4 tsp salt

1/2 tbsp olive oil

1 tsp. Chili powder

1/2 tsp cayenne powder

1/4 tsp ginger

1/4 tsp chipotle chili  (this spice is SPICY so adjust to taste)

1 tbsp lime juice

 

Directions:

  1. Preheat oven to 400 degrees
  2. Peel the jicama and slice vertically to make thick slabs. Cut the slabs into fries
  3. Place in bowl and add olive oil and all spices to bowl
  4. Toss to coat and then pour lime juice over fries
  5. Place on a parchment lined pan and bake in oven for 40 minutes or until tender
