Rice Pudding!

Happy weekend!! So lately mom has been trying to take our favorite Lebanese foods and making them healthier. And this time it was RICE PUDDING! My absolute fav!!! She made it dairy free (I suggested using cauliflower instead of rice…. She wasn’t in to that hahaha I can’t seem to figure out why!) So there is rice in this but hey rice is an east to digest carb so why not! Hope you try this one out because its super easy (made in a crockpot!) and its the BEST!

Crockpot Dairy-Free Rice Pudding (print here )

Makes about 16  ½ cup servings

Ingredients:

1 cup organic long grain rice

½ cup pure maple syrup

½ coconut sugar

7 cups almond/coconut milk (We used a blend of both)

9 tbsp. water mixed with 3 tbsp. arrowroot powder

3 tbsp. rose water or 2 tsp. vanilla

Directions:

  1. In a crockpot, mix together rice, maple syrup, coconut sugar and milk
  2. Cook on high for 3 hours
  3. Then stir in the arrowroot mixture and rose water
  4. Serve warm or place in fridge. Sprinkle with cinnamon and enjoy
