AMAZING Mixed Vegetables!

Make it easier on yourself by roasting up these veggies for the whole week! They are perfect warm or cold and are soooo tasty! We’ve been adding these veggies to every meal!! Hope you enjoy 🙂

Roasted Mixed Vegetables (print here)

Ingredients:

3 zucchinis, cut into small chunks

1 broccoli, florets

2 red bell peppers, cut into chunks

8 oz. package of mushrooms, cut in half

8 oz. package grape tomatoes

2-3 tbsp. ghee, melted

Vinaigrette:

2 lemons, zested and juiced

¼ cup olive oil

1 tsp. salt

½ tsp. pepper

1 tbsp. oregano

Directions:

  1. Roast all veggies except tomatoes in 400 degree oven for 20 minutes
  2. Toss in the tomatoes and roast another 5 minutes
  3. Mix the vinaigrette ingredients and pour over veggies
  4. Can serve warm or cold!
