Roasted Veggie Recipe… Again😬

Never too many roasted vegetable recipes right??? It makes it so easy to get extra veggies in when they are already prepped and prepared so just make a big batch of these and youre good for a week👍🏽👍🏽👍🏽 (or in our house, about 3 days😬) And mint just makes everything so summery☀️

Mint Dressing and Vegetables (print here)

Ingredients:

Dressing-

1 cup fresh mint

Zest of one lemon

¼ cup lemon juice

¼ cup olive oil

1 garlic clove, minced

2 tbsp. balsamic vinegar

1 tsp. salt

¼ tsp. pepper

Vegetables:

2 zucchinis, cut into small chunks

1 broccoli, florets

1 green bell peppers, cut into chunks

1 red bell pepper, cut into chunks

8 oz. package of mushrooms, cut in half

8 oz. package of grape tomatoes

1 onion, quartered and sliced

1 tbsp. ghee, melted

½ tsp. pepper

1 tsp. salt

Directions:

  1. Roast all veggies, except tomatos, in 400 degree oven for 20 minutes
  2. Toss in the tomatoes and roast another 5 minutes
  3. While cooking the vegetables, blend the dressing ingredients until combined
  4. Place vegetables in a bowl and pour dressing on top, can serve warm or cold
