Fennel Salad

Perfect summer salad that isn’t lettuce!!! Super simple with a lemon poppyseed dressing🍋  And fennel is just the best☺️

Strawberry Fennel Summer Salad (print here)

Ingredients:

2 medium fennel bulbs

1 cup strawberries, chopped and sliced

¼ cup lemon juice

¼ cup olive oil

1 tbsp. poppy seeds

½ tsp. salt

¼ tsp. pepper

Directions:

  1. Chop the stems off the bulb of the fennel and cut a little bit off the very bottom (hard root part)
  2. Then cut into quarters and slice the quarters into thin slices
  3. Place in bowl and mix in strawberries
  4. Blend lemon juice, olive oil, salt, pepper, honey and poppy seeds in a food processor until combined
  5. Pour over fennel and strawberries and enjoy
