Really into the mint lately

This mint dressing is seriously the best thing everrrrr!!!!! Here’s a different way to eat it on some Brussels because they are also the best👌🏽

Brussels and Mint Salad (print here)

Ingredients:
Dressing-

1 cup fresh mint

Zest of one lemon

½ cup lemon juice

1/3 cup olive oil

2 tbsp. balsamic vinegar

1 tsp. salt

¼ – ½ tsp. pepper

Salad-

30 Brussels sprouts, cleaned and trimmed

1 bunch kale, shredded or cut thinly

Dash of salt and pepper

2 tbsp. bacon fat (leftover) or ghee, melted

Directions:

  1. Add all dressing ingredients to a mini blender or food processor, set aside
  2. Cut the Brussels into quarters and toss with the bacon fat, sprinkle with the salt and pepper
  3. Roast in a 400 degree oven for 15-20 minutes
  4. Toss kale with the Brussels in a bowl
  5. Pour over dressing and toss one more time until all combined
