Pistachio truffles

There’s a secret ingredient in these and it’s avocado🥑😬  And even some hemp seeds for more healthy omega 3s!! These are super good for preworkout or just for a low sugar snack!!

Pistachio Truffles (print here)
Makes 16 small balls

½ cup pistachios
¼ cup hemp seeds
¼ cup sunflower seeds
½ small avocado
2 tsp. cinnamon
2 tbsp. nut butter
pinch of salt
2 scoops protein powder (we used Vital Proteins Collagen Peptides)

Directions:
1. In a food processor add the pistachios, sunflower seeds and hemp seeds and pulse until a powder forms (make sure to not blend too much because it will become a paste). Pour into a medium sized bowl
2. In the food processor add the avocado, nut butter, cinnamon and salt and pulse until smooth and creamy
3. Pour avocado mixture into the nut mixture, add the protein powder and mix well (should be sticky)
4. On a parchment lined pan, spoon out little balls, should make about 16 balls
5. Place into freezer to firm up for about 2-3 hours
6. Place them into a container when they are solid and store in the freezer until ready to eat
