Grain-Free Muffins

Another banana flour recipe!!! I think I got the hang of this flour after like 5 tries😅 This flour absorbs a lot of moisture which I great because you can use less flour and still get MORE muffins!!!! 1 cup of flour makes 12 muffins because this batter is like seriously so liquidy, it’s crazy! But they taste DELICIOUS!!!

Lemon Poppy Seed Banana Flour Muffins (print here)

Makes 12 muffins

Ingredients:

1 cup banana flour

6 dates + ½ cup water

1 cup water (could use milk if preferred)

4-5 tbsp. lemon juice (I added some lemon pulp as well, this is from 2 lemons)

2 tbsp. lemon zest

½ tsp. baking soda

2 tbsp. poppy seeds

1 tbsp maple syrup, if needed

Directions:

  1. Blend dates and water until a paste forms
  2. Add flour, water and date paste to a medium sized bowl, stir
  3. Add lemon zest, lemon juice and poppy seeds. Stir and then add in baking soda. If you want it sweeter add the maple syrup now
  4. Line a muffin tin with either silicon liners or regular. Pour batter into all 12 equally (batter should be very wet)
  5. Bake at 350 degrees for 20-25 minutes or until a toothpick comes out clean
