Noodles and Avocado Sauce

Who needs pasta when you literally have a million different vegetables to make “noodles” with???🥒🥕🍠 I think zucchini noodles are still my favorite but sweet potato noodles are second fav!! And the avocado sauce can go on EVERYTHING!!!

Asian Sweet Potato “Noodles” with Avocado Turmeric Sauce (print here)

Ingredients:

1 avocado

½ cup water

½ cup chicken bone broth

¼ tsp. turmeric

¼ tsp. pepper

½ tsp. salt

½ tsp. lemon juice

¼ cup nutritional yeast

2 medium sweet potatoes (can use any type of sweet potato)

Directions:

  1. Preheat oven to 400 degrees. Poke holes in the sweet potatoes and place on a foil lined pan. Cook for 20 minutes
  2. Once the potato is cool, peel it. Then spiralize into noodles
  3. To make the sauce, blend avocado, water, broth, turmeric, salt, pepper and lemon juice
  4. In a small saucepan, add noodles until tender. Add sauce on top and serve warm (its also great cold!)
