Tater Tots

One of my new favorite ways to eat sweet potatoes👌🏽

Sweet Potato Tots (print here)

Ingredients:

1 ¾ cup sweet potato, cooked and mashed (2 medium)

1 cup spinach, chopped fine

¼ cup banana flour (could probably use almond flour)

1 tbsp. ground flax seed mixed with 3 tbsp. water

¼ tsp. garlic powder

½ tsp. paprika

½ tsp. salt

Directions:

  1. Cook sweet potato at 400 degrees for an hour, let cool, then mash
  2. Add spinach, flax egg (or chia egg), garlic powder, paprika, salt and flour and stir together
  3. Form little tots on your palm and place them on a parchment lined pan
  4. Cook at 350 degrees for 20 minutes or until lightly browned
