Plantain Tortillas (print here)

Makes about 8 regular

Ingredients:

2 large green plantains (make sure they are green)

½ cup tapioca flour

½ tsp. salt

Directions:

  1. In a food processer, blend plantains and salt until smooth (no chunks)
  2. Add tapioca flour and stir until a think dough forms
  3. Warm a griddle to 250 degrees
  4. Take a small handful of the dough and gently place on the griddle and press it until it is a thin circle. (Be careful not to burn yourself!) I tried to roll these out before putting them on the griddle but they would just break, so this way works a lot better. And make sure these are green plantains because they will not stick to the griddle but yellow ones will
  5. Cook for about 2-4 minutes on each side
