Summer is still here!

Even though it’s been colder lately it’s still summer! And it’s the perfect time to enjoy some summer squash🎉

Roasted Summer Squash (print here)

Ingredients

2 yellow summer squashes, diced

1 zucchini, diced

1 onion, sliced

½ tsp. paprika

¼ tsp. chili powder

2 tbsp. lemon juice

1-2 tbsp. ghee

Directions:

  1. In a bowl, combine squash, zucchini and onion
  2. Melt ghee and pour over veggies
  3. Add paprika, chili powder and lemon juice and toss until coated
  4. Arrange veggies in a single layer on a parchment lined pan
  5. Place in 400 degree oven for 20-30 minutes or until tender and slightly crispy
