Chicken Tenders

Happy Wednesday! Here’s a recipe for kid (and adult) friendly chicken tenders! No grains, no gluten, no eggs👍🏼

Paleo Fried Chicken (print here)

Spice Blend: Makes quite a bit, only need 1 1/2 tsp for each recipe

2 tbsp. salt

1 tbsp. paprika

1 tsp. oregano

1 tsp. onion powder

1 tsp. chili powder

1 tsp. garlic powder

1 tsp. Syrian pepper

1 tsp. dry mustard

½ tsp. celery salt

½ tsp. poultry season

1 tsp. dry thyme leaves

 

Combine all together. Store in a small mason jar until ready to use

 

For the chicken:

1 pound chicken breast, cut into strips

½ cup buttermilk

1 cup almond flour

1 ½ tsp. spice blend

Oil for frying (coconut oil or ghee)

 

Directions:

  1. Mix almond flour with spice blend
  2. Place chicken in buttermilk then into almond mixture
  3. Fry in cast iron skillet, over medium heat. Cook a few chicken stripes at a time, about 2-4 minutes each side. Remove when they are golden and crispy
